Having been having very similar sync problems - think I have tracked it down to having the Touch connected when I have MediaMonkey running (although I don't use MM to sync!).
Not seen the problem with grey font tracks yet myself, though … -

Something I had not noticed before, and see no mention of on the Apple site. If you click on the album cover in the player at the top of the normal window, or in the mini-player, you get a cover art window.
