interesting that you ask about the charcoal v. gas...our gas grill does have a compartment to add chips...but when you get down to it, the temp needs to stay low and it's tough to keep it from getting too hot.

the smoker also did a masterful job with some thick pork chops...the low heat/slow cooking process really contrasts with the typical oven-cooked process. first bite + i'm swearing these are the best i've ever had.
